Saturday Cooking: Spicy Baked Shrimp

I relish the elegance of simplicity, and I savor good food.  After a friend prepared this straightforward shrimp dish for me, I asked for the recipe.  When we cooked the dish together, I admired it all the more for its ease and flavor.

It gives me pleasure to share it here.

Ingredients:

three tablespoons extra virgin olive oil
two tablespoons cajun or creole seasoning
two tablespoons fresh lemon juice
two tablespoons chopped parsley
one tablespoon honey
one tablespoon soy sauce
one pinch (or more to taste) cayenne pepper
one pound large uncooked shrimp, shelled and deveined

Preparation:

Combine the first seven ingredients in 9-inch by 13-inch baking pan. Add the shrimp, and toss to coat, refrigerate for one hour. 

Preheat oven to 450°F. Bake approximately four minutes. Turn shrimp and bake on
for another four minutes.
